Green Tomato Mincemeat
This recipe originated in the US, having tried it out and found it to be an alternative to original mincemeat which may be used in savoury baking.
This filling can be used in pies, biscuits (cookies) or just served warm over ice cream.
Unlike normal mincemeat it has a savoury taste and can be used in savoury pastries or pies.
Ingredients:
8lbs (3.6kg) Apples
26 lbs (7kg) Green Tomatoes
3 lbs (1.35kg) Sugar
2 lbs (900g) Sultanas
1 lb (450g) Currants
8 fl oz (235ml) Vinegar
8 tbsp Margarine
2 tbsp Cinnamon
2 tbsp Lemon Rind
2 tbsp Orange Rind
3 tsp Salt
2 tsp Nutmeg
6-8 Cloves
Makes 26 - 30 lbs (approx)
Method:
Wash, core and dice the apples.
Wash, and chop the tomatoes.
Place the vinegar and apples into in a large saucepan.
Bring to the boil
Add the tomatoes.
Simmer until slightly softened.
Add remaining ingredients.
Simmer gently for 1½ to 2 hours, until thickened.
Pot the Green Tomato Mincemeat into the hot, sterilised jars, filling them as full as possible.
Cover straightaway with waxed discs
Seal while it is still hot and label when it is cold.
Store in cool and dark place, allow to mature.
